Born and raised in Naples, Italy; let me introduce you to my mother-in-law, Pina. I consider Pina to be the best cook in all her family – and we’re talking a very large family here. When the rest of the Hive heard that she would be visiting for a whole month, they eagerly asked if she would mind making some authentic Italian cuisine to take place on a “Taco Tuesday” – a weekly group lunch we all have grown to love. What a delight it was for us to share together in her homemade Neapolitan style lasagna which has been passed down in her family for many generations. Rest assured there were more than a few “Mmmm’s” and “this is SO good!”
Pina started prepping her homemade Bolognese sauce the night before Italian Tuesday; which was sheer torture when the delicious aroma filled our home and I had to wait until the next day to finally consume her extraordinary lasagna dish.
In hopes of opening a restaurant one day, the Ruggiero’s are unwilling to part with their family secret Neapolitan-style Lasagna recipe. They did, however, give us their Italian salad dressing recipe which we hope you will try out at your next dinner party!
- Two parts extra virgin California or Italian grown olive oil
- one part Modena balsamic vinegar
- two squeezes fresh lemon juice
Combine all ingredients in a bowl and vigorously stir together. Pour on top of lettuce greens, and your choice of toppings such as: tomatoes, red onions, feta cheese and kalamata olives. Try it at home with your next pasta dinner!
